The proper technique is to pull the knife along and through the fish in one, long stroke. The longer the blade the easier it is to use the proper techniques.

This is one of the best knives I've ever used. When I opened the package I took it out and did the infomercial thing and sliced a piece of paper with it. Amazing. Made my sushi look so much nicer than sort of mashing it with my terrible dull knives.

Did my research, read reviews, did some cost comparison and landed on this blade. Couldn't be happier, after 2 months the edge is still razor sharp.

I was very impressed when using it as intended to slice and dice fish, and works quite well on vegetables too.
